I stopped at the store for vegetables to make curry for dinner. Off in a corner there was a small pile of purple potatoes. Purple Peruvians. The price was high, but I figured one large potato wasn’t going to break the budget, so I grabbed along with peppers and zuchini for the curry.
Plus, I figured encouraging them to stock new kinds of produce could only benefit me in the long run. These photos don’t really do it justice, this thing is bright purple when you cut it open.
It would make a potato salad the talk of a meal. The only downside is it fades a bit when you cook it, but it’s still plenty purple (and tastes about the same as a red potato).
